I am about to mix my ingredients together for a cake and realized that I don't have vegetable oil, but I do have light corn syrup. Can I substitute the 1/3 cup of vegetable oil for 1/3 cup light corn syrup? Or maybe butter? I have no applesauce!

Yes, you can subsitute a fat. . for a fat.. so butter, or margerine, or shortening, or another kind of oil can be substituted for vegetable oil. You probably wouldn't want to use a strong tasting oil through, such as olive oil. If you want to make it low fat, and don't mind the texture being different by leaving out the fat, you can add pureed fruit such as pumpkin, bananas, or applesauce (which you don't have!). Corn syrup is a liquid sugar (the sugar that is extracted from corn) so you wouldn't want to add this. Good Luck to YOU!!

I think I would choose the butter before the corn syrup.
Just melt the butter first.

don't use the syrup. melt and cool the butter, it will add a butter flavor to the cake. I have made a cake with just water and eggs. increase the water amount 1/4 of a cup, it isn't as thick as the oil. it won't take as long to bake either.

Carrot cake has enough other strong flavors in it (the spices, the raisins, the nuts, &c) that the flavor the olive oil would impart will be un-noticable, so yes, you could substitute it. I wouldn't use it in a cake with a very delicate flavor (such as an almond cake or a white cake) because you may over-power the subtle almond or vanilla flavor of the cake. If you are making cake from a mix, and are looking to make it healthier, you can replace the oil with an equal amount of applesauce or canned pumpkin. (Pumpkin might be especially good in carrot cake!)

Melt the butter and it should work just as good as the oil!
