there are so many! who are you cooking for? how many people? etc. i have a curry dish that i make that seems to please everyone and is very easy to make.
1 whole chx (segmented and skinned if preferred)
can of coconut milk
can of chx stock
1/2 can of evaporated milk
garlic paste
any type of curry powder (garam masala)
red pepper
cumin
butter and flour (for a small roux)

brown chx in a pot until some fat is rendered from the skin (remove from pot)
add butter and flour to the fat- make roux (the darker the better)
add chx stock and coconut milk (simmer)
add seasonings (anything to taste)
return chx to pot and evaporated milk
coke partially covered, until the sauce is to the consistency you would like. ( because the chx has so much moisture from the milk and stock, you can keep cooking for a long period of time)
finished!
you can add onions, celery, peppers etc if you would like. add them after making the roux.

well , i fry chicken in garlic and ginger paste with a hint of salt and ofcourse a little oil.when its brown i add fresh chopped tomatoes , probably two tomatoes in one chicken ,,i cook it on high flame so the tomatoes are dissapeared into a paste ,,,at the end i add a bit of black pepper.thats it , its easy quick and believe me if u make it the right way its yummy too
