We are having Pasta e Fagioli. It's a traditional Italian soup, like the one at Olive Garden.

1 small onion, minced
1 clove garlic, minced
1 can diced tomatoes with their juice
1 can white beans
2 cans (28oz) chicken broth
1 cup small salad pasta or dilitani
Handful of spinach (if you dare:)

In a soup pot, cook the onion and garlic for 2 mins. Add the tomatoes, beans, chicken broth, and pasta. Cook until the pasta is edible and tender. At the last minute, add the spinach and a pinch of salt to wilt it.

I serve the soup with crusty bread that has been toasted in Extra Virgin Olive Oil for homemade croutons. Add lots of parmesan!

I made a big dinner last night. Spaghetti with half ground beef half ground turkey meatballs, Spinach salad with marinated sundried tomatoes, marinated mushrooms, Garlic and parmesan cheese, and french bread with a butter, garlic, pesto, parmesan spread cooked under the broiler. Tonight it is mac & cheese with hot dogs...lol

ummm...let's see, tonight it's corndogs, mac & chz and brocolli (just have to ask the kiddos if they want it raw or steamed with a bit of chz) nothing fancy when you're cooking for a 4 and 6 year old, lol

I fixed beef, bean, & cheese burritos, some spanish rice and a bean dip with tortilla chips.

we're having taco-nachos!

crumble up some tortilla chips, splat some fat free refried beans on those, taco meat, cheddar cheese, salsa, lettuce and tomato and a lil bit of sour cream
