I'm running short on time for my science fair. I'm dealing w/ plants and the weather's cold now, so what kind of bean can I grow QUICKLY and doesn't require a lot of sunlight? or is there another plant I should grow?

You might try some kind of small grain like wheat or oats for the cold weather. You don't say what you want to do with the plants so I can't help you much. Most beans will sprout pretty fast. A larger bean like a Lima would give you a larger plant faster than a smaller bean. Most plants are going to need a good light source. The best way to get some good plants as fast as possible will be to improve your light source as much as you can.
