I have half of an acorn squash that has been seeded and hollowed out. I was thinking of stuffing it with wild rice, raisins, and almonds. Should I bake the squash first and in the meantime make the rice on the stove and then fill it in when everything is done? Not sure how to orchestrate this.

I'm open to other ideas of what to fill it with.

I love acorn squash prepared with just butter and brown sugar. Bake upside down until it is fork tender then turn it over and fill with butter and brown sugar and bake a little longer until the brown sugar kind of caramelizes. I would do this too if I were filling it like you want to. Filling it after it is done baking.

3 acorn squash, about 1 1/2 pounds each, stems cut off
6 tablespoons unsalted butter, softened
2 tablespoons Dijon mustard
6 tablespoons honey
Kosher salt and freshly ground black pepper

Preheat the oven to 375 degrees F.
Place cavity side up in a large roasting pan.
Mix the butter, mustard, and honey in a small bowl until blended. Fill each squash cavity with 2 tablespoons of the butter mixture. Season with salt and pepper. Bake until the squash is very tender, 1 to 1 1/2 hours.

bake the squash most until it's almost done and cook the filling until it's almost done. then, add them together and bake again. SOUNDS YUMMY!
