Place two chicken breasts, boneless/skinless, in a big ziploc ba. Add 1 cup of salsa, 1 cap full of oil and some pepper. Let it sit in your fridge a few (4) hours.

Place the chicken on the grill (or a grill pan or a skillet) and cook it on medium/med-high heat for 12 minutes. Slice the chicken when it's done into strips.

Use the chicken to make fajitas or on top of a salad. Trust me: this recipe rocks.

Sour Cream Noodle Bake
6 oz medium egg noodles
1 lbs ground beef
1 cup sour cream
1 cup cottage cheese
1 jar spagetti sauce
1/2 cup grated cheddar

Cook the noodles. In a skillet, brown the meat (seasoning it with salt and pepper). In a bowl, combine the meat and the spagetti sauce. In a seperate bowl, combine the cooked noodles with sour cream and cottage cheese. In a 7x11 ish pan, spread the noodle mixture on the bottom. Cover it with the spagetti sauce mixture. Sprinkle the cheddar on the top and bake at 350 for 30mins.

We call this Noodle Crack -- it's that good.

4 to 6 oz salmon fillet (from the meat case at the store)
Salt and Pepper
Garlic powder

Place the salmon on a square of foil. Season it well. Wrap the foil around it like a present. Grill the foil packet for 12-16 minutes on medium.

Go buy yourself a slow cooker. You will get a cook book. You can go on line to find recipes. If you eat meat it is tender. Pinto beans rinsed soaked Add1/2 small chopped up onion. Make sure enough water is added (use small amount of beans. Different kinds of soup are good cooked this way. You can put in food and it does cook slow(making your meal ahead) You get to come in and smell your delicious food cooking. You won't even need a woman (not for Cooking) if you get that slow cooker. I like to make drop dumplings in mine chicken or beef or kraut-different kinds of soup-casseroles. You can even make desserts. You will fall in love with your slow cooker. You don't have to worry about anything burning. Vegetable soup or casseroles are healthy. Eat some fruit to. 100% whole wheat bread. Corn bread. slice of bread cheese and pepperoni for small pizza. Oyster soup-I buy the canned ones (cheaper and just as good) Let them come to a slow boil add a little water. then after boiling for a few minutes add milk and butter or marg(i use butter) Good with crackers. You can open up a can of Salmon and make it much the same way. I leave in the bones(They are soft-mash them up) but take off the skin and also be sure to add the juice in can. Hope it helps a little. This is good and fast and nourishing.

Buy frozen tv dinners to see what you like, then learn how to prep the food yourself. I like S.o.S., which is white sauce with sliced beef on toast. The white sauce comes premade, the beef comes in glass jars which can be used as water glasses and the bread can be toasted in any number of ways. Then there is rice mixed with almost any soup, a great filler-upper. Cooking is fun and easy now that we have pre prepped food. Even just a plain potato cooked in water until soft with butter and sour cream is delicious.

My favorite for beef is a beef roast in the crockpot low all day. Pour a condensed cream of mushroom soup over this it makes a delicious rich gravy. Serve with noodles and a can of veggies.

Make Taco chicken by following the directions on the aco seasoning Package. Serve over minute rice with a veggie

Make a stir fry using your favorite meet.

Purchase a Rotisserie chicken and first night eat that with a baked potato and a salad.

2nd night have soup and chicken salad sandwiches.

Healthy Chicken Enchiladas:

5 small tomatillos, coarsely chopped
2 plum tomatoes, coarsely chopped
1/2 medium-size yellow onion, coarsely chopped
1 (10-ounce) can diced tomatoes and green chiles, drained
2 cups (8 ounces) shredded fat-free Cheddar cheese, divided
2 cups (8 ounces) shredded fat-free mozzarella cheese, divided
2 (8-ounce) packages fat-free cream cheese, softened
2 jalapeño peppers, seeded and chopped
1/2 cup chopped fresh cilantro
1/2 cup low-sodium chicken broth
2 cups chopped cooked chicken
10 (7-inch) flour tortillas

Process first 4 ingredients in a food processor or blender, stopping to scrape down sides.

Stir together half of Cheddar, half of mozzarella, cream cheese, and next 3 ingredients. Stir in chopped chicken. Spoon mixture evenly onto 1 side of each tortilla; roll up, and place, seam sides down, in a 11- x 7-inch baking dish. Sprinkle with remaining cheeses; top with tomato sauce.

Bake at 350° for 35 minutes. Serve with black beans and rice.

NOTE: If you don't have time to spare for the prep work, you can easily make this dish ahead. Cover and chill enchiladas up to 8 hours before baking, if desired. To serve, uncover and bake at 350° for 40 to 45 minutes or until thoroughly heated.

Yield: Makes 4 to 6 servings

PORK CHOP SUEY

1 pound boneless pork tenderloin
2 cups sliced celery
1 cup sliced onion
1 cup fat-free beef broth*
1 tablespoon lite soy sauce
1/4 teaspoon salt (optional)
2 1/2 tablespoons cornstarch
1/4 cup water
1 tablespoon molasses
1/4 teaspoon ground ginger
1 can (16 ounces) bean sprouts, drained (or fresh)

Cut pork into 1-inch strips, 1/4-inch thick. Brown pork in a large skillet that has been sprayed with non-stick cooking spray.

Add the next five ingredients, cover and simmer for 5-10 minutes.

Meanwhile, in a small bowl, mix cornstarch, water, molasses and ginger. Stir into hot mixture and bring to a boil, stirring constantly until thickened. Add bean sprouts and heat thoroughly.

Serve over noodles or quick-cooking brown rice.


MANDARIN ORANGE SEAFOOD


1 pound scallops or shrimp (shelled & deveined)
1 tablespoon minced fresh ginger
1-2 tablespoons lite soy sauce (optional)
1 cup green onions, sliced in 1-inch pieces
2 cups red bell pepper strips
1 tablespoon cornstarch
3/4 cup fat-free chicken broth*
1 can (11 ounces) mandarin oranges, drained
1 can (8 ounces) sliced water chestnuts, drained
hot cooked brown rice or noodles (optional)

Spray a large skillet with non-stick cooking spray. Add seafood, ginger and soy sauce. Stir-fry a few minutes or until seafood is done. Remove from skillet and keep warm.

Add green onions and red pepper to skillet. Stir-fry until crisp tender, adding water or broth, as needed, to prevent sticking.

In a small bowl, mix cornstarch with chicken broth. Stir into skillet. Cook, stirring constantly, until thickened.

Gently stir in cooked seafood, mandarin oranges and water chestnuts. Heat thoroughly. Serve over brown rice or noodles.

CHICKEN CHILI

1 can (4 ounces) diced green chiles

1/2 teaspoon cumin

Cut chicken in bite-size pieces. Brown chicken in a saucepan that has been sprayed with non-stick cooking spray. Add remaining ingredients. Cover and simmer for 30 minutes or until chicken is tender.

All fruits are fruit and vegetables. A "vegetable" is a plant, any part of which can be used for food.

In the superstore, fruits are usually chosen far too soon. Some are rocks, many are wrong. Some of the fresh vegetables are generally right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
