Science fair plants?

I'm doing a science fair on what type of water is most effective on plants (ex. pond, salt water). I'm running short on time, so what kind of plant is best for indoor observations and grows super fast? I don't need any fancy plants. Just something simple I can grow quickly in a small pot.
