As a Falconer in training (unlicensed) I Can say from my readings that the falcon can reach 200 mph in a dive on prey (this has been recorded in the peregrine species especially) Check out the California hawking website.

Not so long ago a falconer who was also a skydiver trained a peregrine to follow him out of an airoplane. He shot a lure out in front of him (towards the ground) with a speedometer on it that reached upto 250mph. The falcon caught the lure after it had already reached 250 mph so it was doing a higher speed than that. Up to press that was the fastest recorded speed of a peregrine falcon.
