Fig and Lemon Chicken
INGREDIENTS
1 lemon, juiced
1/4 cup brown sugar
1/4 cup white vinegar
1/4 cup water
1 1/2 pounds dried figs
1 lemon, sliced
12 chicken thighs
salt to taste
1 tablespoon chopped fresh parsley
1 teaspoon dried parsley
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).
In a small bowl, combine lemon juice, brown sugar, vinegar and water; set aside.
Place figs and lemon slices in the bottom of an 11x16 inch baking/roasting dish. Arrange chicken thighs on top, then pour vinegar mixture over chicken. Finally, sprinkle with salt and dried parsley to taste.
Bake/roast at 400 degrees F (200 degrees C) for 50 minutes, basting frequently (turn figs if they begin to brown).
With a slotted spoon, remove chicken, figs and lemon slices from baking dish and place on a warm platter. Skim fat from cooking juices, then pour over chicken as sauce. Garnish with fresh parsley and serve.

keep it simple- the key is to make it together-- soups are good for this because the more stuff you each throw in the better it gets!
start with equal parts chicken and beef stock, add some meat of your choice, and herbs and spices -- throw in some veggies and allow to simmer until veggies are tender-- add 1 cup wine to give it some flair and some heavy cream if you want it creamy... this is very good with almost any combination of flavors
for dessert have a chocolate cake from a mix topped with cool whip and canned cherry pie filling

Go to www.food.com (Food network website). Paula Deen had a recipe on her Valentine's show last week for Chicken Divan. I made it that night and my whole family loved it and it was super easy. Although you can buy raw chicken and cut it up and cook it first, I used canned chicken, frozen broccoli, and mixed it with the cream of mushroom soup (You can use cream of chicken if you don't care for mushrooms. Bread crumbs and parmesan cheese.

Boneless chicken thighs rolled out flat ...... stick a layer of pate and a thin piece of steak and top with fried onion and mushroom mixture. Roll up and wrap in a slice of parma ham. Bake in the oven for 20 mins and serve with fresh steamed veg and new potatoes and a red wine gravy.

I don't think you have to do anything fancy. A spagetti dinner with candlelight and music playing can set the mood just perfectly. :)
And spagetti is one of the easiest things to make ever!
