If it is rust, the knives are probably not stainless steel, which is a good thing because it's easier to sharpen and maintain non-stainless knives using a stone.
To remove the rust you could use steel wool - or naval jelly (hardware store rust remover) or even try soaking them in vinegar overnight.

I am wondering if your good kitchen knifes are "stainless steel"? If so, are you running them through the dishwasher? That will cause spots, which if not wiped off will eventually lead to rust. If they are have rust on them, an SOS pad will gently allow you to scrub off the rust, then wash them very good with a liquid dish soap, and then dry them completely with a soft dry cloth.

Are you putting them inthe dishwasher? They may be touching something else int eh DW that is rusting (the rack? other utensils?) or they may not be as good a knives as you thought.
Steel wool will remove the rust, then oil them down to prevent it from returning.

You should be able to prevent rust by drying off the knives as soon as they are cleaned. That's all I can say, sorry.

I have a good set of knives, and even though I don't run them through the dishwasher, if I don't dry them right away they gets spots. I have found that KABOOM works great. Just squeeze a couple of drops and use a green scrubby. It also works great on my stainless steel pans.

Good Knives have to be hand washed you can't put them in the dishwasher.

remove rust from your utensils by rubbing it with a scouring powder. Then coat it with vegetable oil and wipe it with a paper towel
