I don't know if it has changed, myself. I thought I detected a difference though..but here is a recipe you can whip up yourself!
The recipe calls for food processor, although I use a blender, or even a hand blender and a deep bowl.
To do a Real Mayonnaise:
Have everything at room temperature. To the bowl of your food processor, with the steel blade at ready, add:
2 egg yolks
1 whole egg
1 Tbl. French style mustard
grind of black pepper, or bit of white or red
pinch of salt
juice of lemon
Turn on food processor, and let run for 10-15 seconds. Then, while still running, dribble in:
2 cups oil.
Use corn, peanut or other oil. For the distinctive taste, some or all of the oil can be olive. Be careful though, in a Mayonnaise made with all olive oil, if the oil is the least bit heavy the Mayonnaise will be a heavy thing indeed.
When all the oil has been added, shut off the machine and taste the Mayonnaise. You might want to add a bit more lemon juice or salt. This is also the time to add a bit of Tarragon, or a few chives, maybe a tiny touch of a fine curry powder, or anything else that might give it a distinctive flair. Whirl it few more seconds, and scrape into a stainless steel or glass bowl. Enjoy fresh and warm, or chill well before using.
Try it..you might never buy store bought again!

You can make your own if you want to take the time:
RECIPE FOR MAYO:
Makes 2 cups
4 egg yolks
1 3/4 cups vegetable oil
4 tablespoons white wine vinegar
1 teaspoon salt
1 teaspoon mustard
Combine all ingredients (except oil) in blender and mix.
Turn blender to high and drizzle in oil until and emulsion is formed. If too thick, you can thin with a little cream.

I haven't noticed a difference.
You need a good blender and a steady hand to make your own mayo. The key is to add hte oil super-slowly while the blender is going w/ the egg, salt, acid, etc. But it's worth it!
Emeril's Homemade Mayonnaise
1 egg*
1 tablespoon fresh lemon juice
1 cup olive oil
1/8 teaspoon freshly ground black pepper
1/2 teaspoon salt
In a food processor or blender, blend the egg and lemon juice for 10 seconds.
With the processor running, slowly pour in the oil through the feed tube. Mixture should thicken. Add the pepper and salt and pulse once or twice to blend.
Transfer to an airtight container and refrigerate for at least 30 minutes before using. Best if used within 24 hours.

Mayonnaise is a thick, creamy sauce or dressing that is made of oil, egg yolks, lemon juice or vinegar, and seasonings- to make our own, look in any cookbook. It is simple enough...you add the ingredients to a blender and poof!...They if you like that, a few more ingredients and you can make your own Thousand Island dressing. But, look out, making things that you normally buy can become habit forming!

its not changed , ok if u really wana find out , try a different companys mayo for a few days then come back to the hellmans , u wll have the same taste

No - it has been, & always will be, the best-selling mayo on the market. I love it. I doubt the change is noticeable, if there is one.
