This traditional cornbread recipe takes me back to my childhood days with my mother making cornbread and traditional chili or soup. The recipe is an award-winner. Enjoy!

Cornbread Recipe
Famous Restaurant Recipe
Preparation time: 15 minutes. Servings: 16

Ingredients:
2 l/2 cups flour, stirred
1 1/2 cups cornmeal
2/3 cup sugar
1 tablespoons + 1 teaspoon baking powder (4 teaspoons)
1 teaspoon salt
2 cups buttermilk
2 beaten eggs
5 tablespoons + 1 teaspoon melted butter

Instructions:
Preheat oven to 400 degrees F
Grease baking pan or muffin pan (or use muffin paper liners)
In a large bowl, combine flour, cornmeal, sugar, baking powder and salt and blend
In a small bowl, combine buttermilk, eggs and butter; stir into dry ingredients
Do not over mix or texture will not be right
Pour into greased pan or scoop into greased or paper lined muffin pan filling 2/3 full
Bake 16-18 minutes for muffins and about 25-30 minutes if using a 9 X 13 inch pan or until toothpick inserted in the center comes out clean

Easy Cornbread:

2 packages Jiffy cornbread mix
2 small cans creamed corn
1/2 cup milk
1 egg
3-6 slices cooked, crumbled bacon,
1 teaspoon red pepper flakes
or red pepper, optional

Preheat oven according to package directions,
spray skillet or 8-inch pan with Pam spray.

Mix all ingredients together, reserve a tablespoon
of bacon to sprinkle on top of cornbread.
Bake according to Jiffy package directions.

This is a moist delicious cornbread.
Good served with chili or soup on a cold day .

I don't like Jiffy at all. It is too sweet for me. Here is the recipe that I like. It is easy.

1 1/2 cups cornmeal
1 cup Original Bisquick® mix
1/2 cup butter or margarine, melted
1/4 cup sugar
1 cup buttermilk
1 teaspoon baking soda
2 eggs


1. Heat oven to 425°F. Generously grease bottom and side of 10-inch cast-iron skillet, 9-inch round pan or 8-inch square pan with shortening. If using skillet, heat greased skillet in oven about 5 minutes or until hot.
2. Stir all ingredients until smooth. Pour batter into pan.
3. Bake skillet 15 to 18 minutes, round or square pan 18 to 22 minutes, or until golden brown. Serve warm.

Check the back of a corn meal box for the recipe...or find an OLD cookbook that tells ya how...of course, it also depends on what you think is the best...is it sweet (add sugar to the batter), it is yellow or white (the cornmeal makes the difference), do you want cheese in it?, jalapenos? I love my moms cornbread, and she does not add flour to the cornmeal or anything crazy. Good Luck!

Moist Golden Cornbread

Serves 9

Preparation Total: 35

Ingredients:

1 cup flour
1 cup corn meal
2 tablespoons sugar, Optional
3/4 teaspoon baking soda
3/4 teaspoon salt
2 cups buttermilk
1 egg, beaten
1 tablespoon butter, melted

Procedure:

Heat oven to 400 degrees F. Mix flour, cornmeal, sugar, soda and salt. Mix buttermilk and egg. Stir buttermilk mixture and butter into cornmeal until blended.

Grease 8-inch square pan. Pour batter into pan. Bake 20 to 25 minutes or until golden on top and wooden pick inserted in center comes out clean.

I use jiffy cornbread mix ,but i lay bacon in bottom of pan 1st then pour mix on top &bake it!
