I want to try something new, as im always cooking the same like spag bol, curry etc. Anyone have any ideas where i can try some new recipes. I dont eat much meat though.

I have eaten all of these and they are all very good...


Pasta with Asparagus and Peas
Recipe courtesy Kathleen Daelemans

1 pound penne rigate
1 bunch asparagus, cut into 2-inch pieces
2 cups fresh shelled peas
1 clove garlic, minced
1/4 cup loosely packed, freshly grated Parmesan
1 teaspoon olive oil
2 tablespoons fresh, chopped oregano
Salt and freshly ground black pepper

Place penne in a large pot of rapidly boiling, salted water. When pasta is about 2 minutes from being done, add the asparagus and peas and cook for 2 to 3 minutes or until the pasta and asparagus are cooked. Reserve 1 cup of cooking liquid. Drain pasta and return to the pot. Place the pot over low heat.
To the pasta and veggies, add only as much water as is necessary to create a nice "sauce". Cook for 1 minute, stirring constantly. Remove from the heat and add the garlic, cheese, olive oil, and oregano and toss to combine. Taste and season with salt and pepper. Serve immediately.

Pasta with Creamy Pumpkin Sauce

1 pkg. (16 oz.) penne pasta, uncooked
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, cubed
1/2 cup KRAFT 100% Grated Parmesan Cheese
1/2 cup (1 stick) butter or margarine
1/2 cup milk
1 cup canned pumpkin
1/2 tsp. ground red pepper
Ground nutmeg to taste

COOK pasta as directed on package.
MEANWHILE, place cream cheese, Parmesan cheese, butter and milk in large saucepan; cook on low heat until cream cheese is melted, stirring frequently. Add pumpkin and spices; cook until heated through, stirring occasionally.
ADD pasta; toss lightly. Serve topped with additional Parmesan cheese, if desired.

Cheesy Stuffed Shells

1 container (16 oz.) BREAKSTONE'S or KNUDSEN Low Fat Cottage Cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese, divided
1/4 cup KRAFT 100% Grated Parmesan Cheese
1 tsp. Italian seasoning
20 jumbo pasta shells, cooked, drained
1 jar (26 oz.) spaghetti sauce
1 large tomato, chopped

PREHEAT oven to 400°F. Mix cottage cheese, spinach, 1/2 cup of the mozzarella cheese, Parmesan cheese and Italian seasoning until well blended. Spoon 1 heaping Tbsp. of the cheese mixture evenly into each pasta shell.
COMBINE spaghetti sauce and tomatoes; spoon half of the sauce mixture into 13x9-inch baking dish. Place shells, filled sides up, in baking dish. Spoon remaining sauce mixture over shells. Cover with foil.
BAKE 25 min. or until heated through. Uncover; top with remaining 1/2 cup mozzarella cheese. Bake, uncovered, an additional 2 min. or until cheese is melted.

Use frozen cheese ravioli and add your favorite tomato sauce, serve with garlic bread and a salad.

Penne with Five Cheeses

Kosher salt
2 cups heavy cream
1 cup crushed tomatoes in thick tomato puree
1/2 cup freshly grated Pecorino Romano (1 1/2 ounces)
1/2 cup shredded imported Italian fontina (1 1/2 ounces)
1/4 cup crumbled Italian Gorgonzola (1 1/2 ounces)
2 tablespoons ricotta cheese
1/4 pound fresh mozzarella, sliced
6 fresh basil leaves, chopped
1 pound imported penne rigate pasta
4 tablespoons (1/2 stick) unsalted butter
Preheat the oven to 500 degrees F.
Bring 5 quarts of salted water to a boil in a stockpot.
Combine all the ingredients except the penne and butter in a large mixing bowl. Mix well.
Drop the penne into the boiling water and parboil for 4 minutes. Drain well in a colander and add to the ingredients in the mixing bowl, tossing to combine.
Divide the pasta mixture among 6 shallow ceramic gratin dishes (1 1/2 to 2-cup capacity). Dot with the butter and bake until bubbly and brown on top, 7 to 10 minutes.

Chicken Ritz Casserole

Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

I have always found that a good fish needs little seasoning and goes well with angel hair pasta and veggies...I love asparagus with my salmon.

You could also try garam marsala chicken. Cook the same way you cook your chicken breast putting it in an olive oil and garam marsala. very sweet flavor so you could always add a hot spice to it.

If you want to go vegan, a good grilled mushroom and vegetable dish with steamed rice is always nice. Ask the guy at the local market about the mushrooms and he can help you pick the right flavored one.

I cook by taste so I am sorry I am vague about amounts.

Meatless Loaf

1 onion chopped
14 cup soy milk plus more to moisten
1 12.3 ounce package soft Tofu
1 12 ounce package quorn or veggie mince
3 cups quick oats
1 to 2 cups finely chopped pecans
3 cups stuffing mix or seasoned bread crumbs
2 packages Italian seasoning mix
1 cup ketchup (Catsup)
1 10 3/4 can reduced sodium tomato soup
1 Can water

Combine onion. 1/4 cup soy milk and tofu in food processor and mix until smooth. Add veggie mince/Quorn, oats, pecans, stuffing mix and Italian dressing. Moisten with soy milk until all ingredients stick together. Pour into a 9x13 baking dish and shape into loaf, leaving at least two inches of space on each side of loaf. Bake at 375 for 30 mins.

Remove from oven and cover top of loaf with catsup

Combine tomato soup and water. Pour around sides of loaf in pan.

Return to oven and bake at 375 for 30 to 40 minutes.

Peachy Chicken

cook diced chicken breast with diced onion

add some mushrooms

add a tin of Campbells Condensed chicken soup!! (no extra liquid)

simmer 15 mins

add a little peach juice and about 6 slices of peach!!


sounds odd but its gorgeous.....serve with rice!!

How about a nice thick soup, many many recipes on the internet. I would recommend any mediterranean style soups. (and they don't usually contain meat either!)
