Depends on your hardware.

Media Center will only work on Media Center PCs/Laptops. It has some extra media related features.

X64 versions are designed to run specifically on X64 Hardware, but are otherwise mostly the same as the 32bit versions..

Pro has more functionality than Home, mostly in regard to networking and security.

Media Center is actually Home edition with some extras that let you watch and record TV programs, for computers who come equipped with a TV Tuner

Professional give more security features, let you remotely access your computer from another place. Like a Dell technician trying to fix your computer from his office.

64 Edition is Professional edition but for 64bit CPU like the AMD Athlon 64 or the Intel Core 2 Duo. This version cant be installed on traditional 32bit processors

Depenmds on the uses for it. i have XP Pro and that is great for office and fun work. XP home is actually a bit limiting in features. XP media center rocks if you want your comp to replace your TV :)

Home Edition is the least troublesome, but there are security issues and snafus with all of them.
