It's delicious. The only way I make it is eggplant parmesian.
You slice up 1 large eggplant about 1/8 " thick. Keep the skin on. Dip slices in flour, beaten egg then flour again. Fry in hot oil till both sides are browned.
Put alittle spagetti sauce in the bottom of a 9 X 13 " pan. Then put a layer of eggplant(overlap slices) then a layer of mozzarella cheese. Repeat layers ending with Cheese. Sprinkle a little parm on top and bake covered for 1 hour on 350.
You wouldn't think it would be good but it's Yummygood!!!

it kind of reminds me of tofu in that it doesn't have a lot of flavor on its own but depending on what you do with it, it can be really good...

roasted is great on pizza...i think 2 years ago, USA weekend had a summer bounty pizza that is superb...

also if you like Italian food, eggplant Parmesan is reaaaallllyyy good...nice down home comfort food...personally i prefer to bake it instead of frying it and then it's not too bad for you...you have to slice it really thin (a mandolin is helpful) and then press it in the fridge for 2 nights...layer it with paper towels. this avoids the mushiness that others complain of. then do a basic breading (eggwash first if you eat eggs), and bake (or traditional is pan-fry) until golden...serve with mozzarella and sauce...makes a great hot sandwich.

Its good, but it depends on how you make it, It just hard to explain how it taste, and everyone has different taste buds. the only way you know if your going to like it is if you try it,

It is a bit like Asparagus but without the flavour.
It is not a popular vegetable.

Tastes like watermelon seeds, says my daughter...The salad with onion, oil and salt, the best salad ever!

I hate eggplant.Asians Stir-Fry it.Americans Grill it.Its mushy and tasteless to me....
