Hawaiian Seafood Stuffed Shiitake Mushrooms Recipe
Hawaiian Appetizer

Ingredients:
Makes 16 mushrooms

16 large fresh shiitake mushrooms, stems removed,about 1 pound
1 cup heavy cream
1/2 cup chopped fresh spinach
2 tablespoons chopped shallots
1/2 cup coconut milk
1 pinch dried dill
1 pinch dried tarragon
1 cup crumbled Ritz crackers
3/4 cup cooked crabmeat
1/4 cup chopped cooked shrimp
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons grated parmesan cheese
coconut flakes

Directions:
1. Preheat oven to 350F.
2. In a saucepan over medium low heat, cook the cream and spinach together until cream is reduced by half.
3. Stir in the shallots and cook 1 minute, remove from heat and stir in the coconut milk, dill, tarragon, cracker crumbs, crab, shrimp, salt and pepper.
4. Stuff mushroom caps with seafood mixture and place in a shallow bakinging pan.
5. Sprinkle with cheese and bake 8 to 10 minutes.
6. Garnish with coconut.

Shrimp with Spiced Masala and Coconut Milk

8 servings 35 min 10 min prep

MASALA
2 tablespoons vegetable oil
2 cups chopped onions
4 cloves garlic, minced
1 1/2 teaspoons garam masala
1 1/2 teaspoons curry powder
1 1/2 teaspoons ground coriander
1 teaspoon turmeric
1/2 teaspoon cayenne pepper
1 (28 ounce) can diced tomatoes (IN JUICE)
1 cup plain yogurt
SHRIMP
2 tablespoons vegetable oil
2 lbs uncooked large shrimp, peeled,devienced
1 (13 ounce) can unsweetened coconut milk
1/2 cup chopped cilantro
1/4 cup chopped green onion tops
1 1/2 tablespoons fresh lemon juice


HEAT OIL IN LARGE NONSTICK SKILLET OVER MEDIUM HEAT.
ADD ONIONS; SAUTE UNTIL DEEP GOLDEN, FOR ABOUT 20 MINS.
ADD GARLIC AND ALL SPICES FOR 1 MIN.
COOL TO LUKEWARM.
PUREE TOMATOES WITH JUICE AND YOGURT IN PROCESSOR UNTIL ALMOST SMOOTH.
ADD ONION MIXTURE; PUREE UNTIL ALMOST SMOOTH.
SEASON MASALA TO TASTE WITH SALT AND PEPPER.
HEAT OIL IN HEAVY LARGE DEEP SKILLET OVER MEDIUM-HIGH.
ADD SHRIMP AND SAUTE UNTIL PARTIALLY COOKED, FOR ABOUT 2 MINS.
STIR IN COCONUT MILK, CILANTRO,GREEN ONIONS, LEMON JUICEAND PREPARED MASALA.
SIMER FOR ABOUT 3 MINS.
SEASON TO TASTE WITH SALT AND PEPPER.

COCONUT MILK CAKE

1 box yellow cake mix
1/2 c. salad oil
4 eggs
1 box instant vanilla pudding mix
12 oz. can coconut milk, frozen
1 tsp. vanilla

Blend all ingredients, except coconut milk, for 1 minute. Add coconut milk, which has been thawed; mix. Bake in greased and floured 9 x 13 inch pan for 35 to 40 minutes at 350 degrees. Top with Cool Whip and flaked coconut.

YOU COULD USE ANY VEGGIE YOU DON"T HAVE TO USE SQUASH Winter Squash Soup with Lemon Grass and Coconut Milk 3 slices fresh ginger -- (1/4-in.) 1 cinnamon stick -- (3-in.) 2 teaspoons coriander seeds 1 teaspoon cumin seeds 1/4 teaspoon cardamom seeds 4 cloves 1 tablespoon peanut oil 2 1/2 pounds peeled seeded butternut squash coarsely chopped -- (4 c.) 1 large onion -- diced 2 jalapeño chiles -- minced, divided Tender middle section from 1 lemon- -- minced grass stalk 1 large garlic clove -- crushed 6 cups vegetable -- (or chicken) stock 1 cup unsweetened coconut milk -- (see Note) Salt to taste Juice from 2 limes 1 tablespoon chopped fresh basil 1 tablespoon chopped fresh cilantro 1 tablespoon chopped fresh mint To peel the squash, first cut it in half crosswise, then place the pieces cut side down on a cutting board. Use a small sharp knife to cut the peel away, working from the top of the squash down to the cutting board. Note: Coconut milk is a canned product, not the liquid in a fresh coconut. It can be found at most supermarkets, either with the Asian foods or with the canned milk. In cloth spice bag or piece of cheesecloth, tie ginger, cinnamon, coriander, cumin, cardamom and cloves. Warm the oil in a soup pot over medium heat. Add squash, onion, half the minced chiles, and the lemongrass and garlic. Cook 10 minutes, stirring occasionally. Add stock and spice bag. Bring to boil. Reduce heat to low and simmer soup, partially covered, until squash is tender, about 30 minutes. Remove spice bag. Puree soup, then return it to heat and stir in coconut milk. Heat thoroughly. Add salt and lime juice. Stir in herbs and remaining minced chile and serve. Makes 2 quarts; 4 to 6 servings

Butternut Squash Curry

Ingredients

1 butternut squash
coconut milk
cumin
coriander
turmeric
1 onion
olive oil

Peel the onion and chop into small pieces. Fry gently until soft.

Add I teaspoon of turmeric, cumin and coriander. Fry slightly and then pour over some of the coconut milk.

Peel and remove the seeds from the squash. Cut into generous chunks and add to the mixture.

Cook until the squash is soft and add as much coconut milk as is necessary to keep the curry sauce thick and creamy.

Thai chicken or prawn curry.
I can coconut milk ......... diced chicken or prawns ....... thai red or green curry paste ......... chopped mushrooms ........ few crushed dried chillies. simmer for 20 minutes till meat cooked though and serve with toasted garlic naan breads.

curry chicken-

use 2T red curry paste, heat in pan with 1T oil until foamy, add can of coconut milk until heated through.
add bite sized chicken breast and cook until chicken is cooked.
add sliced red bell peppers, snow peas, whatever veggies you like and searve over rice or rice noodles.

mango/banana sticky rice-

use it in place of regular milk in pancakes...oh goodness...and put some chopped macadamia nuts in too....holy mother it's so good! Don't use maple syrup, use Karo light corn syrup.
