My husband is 6'4, and weighs 267lbs. and is very big boned like (Paul Bunon), and was told by his family doctor on Friday not to eat anyhting white, for the next 30 days,please help me to find foods he can eat and will enjoy.My husband has a stressful job,working as a Highway Dept. worker and he his also very active.We would apperciate anyone's help.Thanks.

I've enclosed three recipes that I think will help you with new ideas for food. I have a large file of recipes so if you would like anything further please let me know.

Best Ever Split Pea

Ingredients:

1-tablespoon olive oil
2 cups chopped onion
2 cups chopped carrot
2 cups finely chopped celery
1/2 tablespoon minced garlic
1 cup yellow split peas
1 cup green split peas
8 cups fat-free chicken broth
1 1/2 teaspoons salt-free seasoning blend
1-teaspoon salt

Directions

1:In a large pot or Dutch oven over medium heat, heat olive oil. Cook onion, carrot, celery and garlic until onion is translucent. Stir in yellow and green split peas, broth, seasoning and salt. Cover, bring to a boil, then reduce heat and simmer 2 1/2 hours, stirring frequently. Puree with a blender or food processor. Return to pot, heat through, and serve.

Apple Chicken

Ingredients

2 (4 ounce) skinless, boneless chicken breast halves, cut into bite-size pieces
1 1/2 cups apple juice
1/4 teaspoon ground cloves
1/3 teaspoon curry powder
1 teaspoon ground cinnamon
1 pinch garlic powder
1/2 cup golden raisins

Directions

1 Place the chicken in a medium skillet over medium high heat. Pour in the apple juice. Blend in cloves, curry powder, cinnamon, and garlic powder. Mix in the raisins.

2 Cook, stirring occasionally, until chicken is no longer pink and juices run clear. The juice will form a glaze over the chicken. Drizzle with the remaining apple juice mixture to serve.

Tip:
If the chicken is done, but the liquid in the pan has not thickened enough for your tastes, simply remove the chicken, and continue cooking the liquid until thick.


High Fiber Low Fat Barbecue Chicken Sandwich

3 ounces shredded chicken (white meat preferred)
2 Wasa crisp high fiber bread
1 leaf Romaine lettuce
Barbecue sauce to taste

Spread barbecue sauce on both Wasa crisp slices. Place chicken on bread top with lettuce and top piece of bread. Wrap in plastic wrap overnight. Next day it will be moist, soft and delicious! Easy to carry for lunches and perfect for snacks! High in protein.

The low carb diets and sugar busters diet all go with the "don't eat anything white" theory. Skip sugar,flour,potatoes,rice,bread etc.
This guy will love having lots of meat and vegetables for dinner and do creative things with fruits and he should be fine for the next 30 days and will be 10-15 pounds lighter!

I believe the dr. was probably referring to white bread; white rice (high carb factors) I doubt he meant don't eat boneless, skinless chicken (white meat would be okay - it's protein). Breads, rice, even potatoes shouldn't be hard to stay away from. Soups should be okay although usually high in sodium. Get bonesless, skinless chicken breasts; whole wheat bread (that is labeled "lite) should be okay too. Ask a nutritionist at a local health club for help as well.

Sounds like a lowered-carb type of diet. Can your husband still have brown rice, whole grain bread, sweet potatoes? Those may make good subsitutes for the things he is missing. Hopefully you guys will discover some new and healty meals that you both enjoy. I am attaching a couple of recipes I like. Hope you enjoy.

The first is veggie soup. I am not a vegetable person, but I use 1 packet of beef stew mix as the seasoning and it makes it easier for me to take. You probably need 4 cans of vegetables, whatever combo you like. Subsitute one can of veggies with a can of kidney beans if you like. Add a 12 oz can of tomato juice or V-8. Add 3 or 4 cloves of garlic, either crushed or whole and as much pepper as you like. If you want, you can add 1 lb of chicken. Chop it up into pieces an inch or so square. Add enough water to cover all ingredients, but not much more. Cook it in the slow cooker overnight until the chicken is tender enough to pull it apart with a fork.

The next is chicken tortilla soup. In slow cooker add 2 cans creamed soups, (I use cream of chicken, but you might like to make one can either cream of onion or cream of mushroom). Put 1 packet of taco seasoning. I like the hot, but it is up to you. Add 1 lb chicken raw & chopped into 1 inch squares. If you like add 1 can of kidney beans. Add chicken broth until the ingredients are covered (or use water and throw in a bit of chicken boulion). Cook overnight until the chicken falls apart with a fork. Serve with a few tortilla strips on the top and maybe a sprinkle of low-fat cheese.

He can eat red,yellow and brown lentils washed and boiled in salads and soups,
any beans in salads,casseroles and soups and meat dishes:
Vegs served with meat,vegs in ratatouille,
Fish grilled again serves with vegs raw or cooked, vegs can be grilled too and serves with olive oil
Veg balls such as spinach boiled and mashed, mixed with eggs and breadcrumbs and put to simmer in tomato sauce instead of veg i also use yellow lentil mashed and serve with tomato sauce
Small omelets of eggs put to simmer in tomato sauce and serve hot accompany by any vegs
Can use eggplants or aubergines like layers of lasagna,first cut lengthwise the eggplant put in flour and fry them in meantime prepare a very light tomato sauce with olive oil, garlic and fresh tomatoes and some fresh basil let it simmer put in a oven proof dish put first some tomato sauce than eggplant continue in this way until the eggplant are finished, finish the top with the sauce put under a grill

That is a ridiculous recommendation. You need to find another Dr. immediately. There are many healthy white foods like chicken, milk, tuna, etc. I have never heard of such a crazy idea.

It sound like the doctor recommended staying away from carbs, ie. bread, potatoes, flour enriched pasta. I would suggest, whole grains, proteins, beans, vegetables.
