A good healthy dinner should consist of lean protein (chicken, fish, etc...) fiber rich veggies and a small serving of whole grain (no white flour products. If it doesn't say 100% whole grain or 100% whole wheat, then it does not count as a whole grain).

Sample dinner:

1 chicken breast (preferably grilled, broiled, or baked)
2 cups broccoli (or other healthy and fiber rich veggie...not corn or sweet peas)
1/4 cup brown rice

A good rule of thumb when looking for fiber rich foods is that the food should contain at least 2 grams of fiber for every 70 calories. If it doesn't, don't waste your time or calories on it. Eating foods high in fiber and protein help you stay fuller and they're better for you. Get into the habit of reading the labels on all the foods you consume and avoid refined sugar, high fructose corn syrup, and foods made with processed flours.

Buy a food scale and measuring cups and spoons. Use these to learn what a correct portion looks like. One serving of meat should be 3 oz, starches 1/2 cup, and a serving of veggies 1/2 to 1 cup. Measure your salad dressing and sauces--a serving is usually 2 Tbsp.

For dinner, I like to have one serving of meat and two servings of veggies, plus a salad with light dressing. (I do eat carbs, but not normally with dinner). Veggies should take up at least half of your plate. They are very filling without adding many calories.

Bake or broil instead of fry, remove the skin from chicken, and avoid heavy sauces. Cook with olive oil instead of butter. Try to eat red meat less often and have more chicken, turkey and fish. Replace white bread and rice with whole grains.

I actually just started doing this about a week and half ago. We've switched from eating fast food all of the time to eating smaller portions of lean chicken and steak. We've paired those kinds of meals with tons of vegetables like carrots, celery, peppers, etc. The weight will come off slowly, but it's worth it since you'll eventually gain a better body and a healthier life style.

I honestly think just about anything can be made for a healthy dinner... the key is portion control. Weigh and measure what you eat. And use appropriate substitutes where possible. I make turkey spaghetti sauce with wheat noodles... or use spices instead of marinades when possible... or grill instead of fry, etc. I see a nutritionist and one thing he told me is that I can have anything I want... up to a certain number of calories. So, for example, if you can only eat 300 calories per meal (just for example's sake), you get a lot more food for your calories if you eat healthier things. i.e., a sliver of pizza, versus a piece of chicken breast, lots of veggies and brown rice. Think in terms of healthy eating... vegetables, fruit, measured servings of whole grains, lean meat, and low-fat dairy. If you count your calories, then make sure you can fit a meal's worth of calories into your day.

Personally, I like 3oz of chicken or fish (chicken tenderloins here - smaller portion size than the mammoth chicken breasts), a pile of vegetables, and a measured serving of brown rice. Pretty healthy, and low calorie (as long as you watch the portion size on the rice)!

Theres vegetable stirfrys. Vegetable currys and stuff like lasagne or bolognese. If your not vegan you could try omelette. Eggs will give you protein and then you could put vegetables, beans, cheese whatever you want inside! Its entirely your choice. You could have pasta dishes or rice dishes??

Actually, it's best not to have dinner when you're on a diet... I suppose fresh vegetables are the answer here.
