I am broke, its cold outside..and I want something good and warm that will last a few days in the fridge to graze on...

My mother's recipe for quick and easy homemade veggie/beef soup:

1 lg can of tomato juice or V8 juice
1 to 1 and a half lbs of lean stew beef
1 pk frozen mixed veggies
1-2 cans beef stock or several cubes of beef bouillion
onion
celery
parsley
bell pepper
black pepper
cayenne pepper (if you like)
bay leaf
barley or orso (just a bit as it swells)
simmer all this in a stock pot until the meat is good and tender

I don't add any salt as the juice and the stock usually contains enough salt. Also you can add water to stretch it if you like.

smells great cooking and you can have several days of it in fridge

Try making beef stew, get some stew beef and cook it in a pan, get some can veggies (taters, corn, peas, green beans, things like that) and put it in a big pot with some stew mix, you can get it at your grocery store and follow the directions on that, to that add whole canned tomatoes and squish the tomatoes with your hands. add the meat get it to a boil and let it simmer for about an hour while you stir it. (if you're useing a crock pot you can just put it on auto and let it cook all day till you're ready to eat) It's good, it's warm and the most expensive thing you need id the meat, and if you want you can use chicken or ground beef. It'll last up to a week depending on how much you make of it. Hope this helps you out.

Chili is always a great cold weather food...and you can stretch it fairly easy, too. If you have the items, some homemade chicken and dumplings are nice....boil some leg quarters, which are very cheap, in some seasoned water.....to make dumplings, use flour tortillas, which have been torn/cut into strips 1 inch wide and about 2 inches long. They make a pretty fast and easy dish! Throw in a few veggies, too if you like them.

Knefla Soup. My husband is Norwegian and made me learn to make this. It's very easy and you probably have most of the ingredients already. I like to make split pea soup in the crock pot. I throw in some dried split peas, onion, carrot, celery, potatoes, ham, and some leftover bacon drippings for flavor.

i would suggest beef stew because beef stew definitely tastes better the next day..use lean meat and you are in the clear !! protein and veggies is all you need..
