I am worried about the risk of electrocution, so a water/steam proof source would be best.

they make little lights that you basically just stick on the wall, or where ever you want them. They're battery operated, and are kinda like touch lampes. you can usually get them at hardware stores or places like bed bath and beyond.

See if you can add 2 hooks in the ceiling about 3 feet apart between 3 and 4 feet. Nice solid grip to carry weight load of about 6 pounds on a chain from each end.
If so, go to Lowes and buy a shop lite. 2 lamp flourescent. get a switch to plug it into then into a wall outlet.
Flip the switch and you have temporary lite that you can remove.
Secure the loose wire with nylon straps wherever possible out of the way.

Check the existing light fixtures. Inside there should be a tag or sticker that tells you the maximum safe wattage bulbs you can use. The landlord or previous tenant may have low watt bulbs in them. If the fixtures are already maxed out on bulbs try some tap lights. They battery operated fixtures that stick to the wall. Just install them where you need more light.

Add a small lamp w/ light-color shade to the counter, if you have one, or maybe a floor lamp if you have room. Hang huge mirrors in the bath, to reflect the light as well.
