Sports party:Six Layer dip
2 cloves garlic
2 teaspoons kosher salt
1(15-ounce) can black beans, drained and rinsed
1 (15-ounce) can pinto beans, drained and rinsed
2 teaspoons chili powder
2 tablespoons water
1 tablespoon extra-virgin olive oil
2 cups lowfat shredded Cheddar
2 ripe avocados, preferably Hass
1 jalapeno, stemmed, finely chopped, (with seeds for more heat)
2 cups chopped romaine lettuce
1 1/2 cups nonfat yogurt, preferably Greek
1/2 cup fresh cilantro, leaves and some stems, roughly chopped, plus more for garnish
3 ripe medium tomatoes, diced
5 scallions (white and green), thinly sliced
Baked tortilla chips, for dipping
On a cutting board, smash the garlic cloves, sprinkle with 1 teaspoon of the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Put the garlic, beans, chili powder, water, and olive oil in the bowl of a food processor and blend until smooth. Spread in the bottom of a 2 quart casserole or gratin dish, or in individual sized dishes, as desired.
Scatter the cheese over the beans. Halve and seed the avocados, then mash with the jalapeno and another teaspoon of salt in a small bowl. Spread a layer of the avocado over the cheese, and then scatter the lettuce on top.
Mix the yogurt with the cilantro and then spread over the lettuce. Add a layer of tomatoes and finally scatter the scallions on top. Chill until ready to serve. Garnish with a few cilantro sprigs and serve with baked chips.
Coctail Party:Herb-Marinated Olives
1 pound assorted olives, such as Kalamata, Cerignola, Greek, Gaeta or Nicoise
2 cups olive oil
1 onion, julienned
4 cloves garlic, thinly sliced
4 bay leaves, torn into pieces
1 branch fennel or 1 teaspoon fennel seeds
2 sprigs fresh thyme
1 sprig fresh rosemary
3-inch piece orange peel, julienned
12 coriander seeds
1/4 teaspoon crushed red pepper (or more, to taste)
In a large bowl combine all ingredients and stir well to combine. Marinate at room temperature at least 24 hours before serving (cover and refrigerate if longer). Transfer to glass jars with lids and refrigerate for up to 2 weeks. (Allow to return to room temperature before serving.)
Note: Don't discard the remaining olive oil after the olives are gone -- it is delicious served as a dipping oil for crusty French bread or drizzled over pasta or grilled vegetables.
Oscar Party: Potstickers
Filling:
1/4 cup garlic cloves
1-inch piece fresh ginger, peeled
2 tablespoons peanut oil
1/4 cup dried fruits, such as apricots, cherries, or raisins
1/2 bunch cilantro leaves, minced
1/2 bunch green onions, minced
Salt and pepper
Pinch sugar
1/4 cup oyster sauce
1 tablespoon chile paste
1 tablespoon sesame oil
2 pounds pork butt, cubed
Round wonton wrappers
1 egg beaten with 1 tablespoon water, for egg wash
Peanut oil, for frying
Dipping sauce, recipe follows
In a blender, combine garlic and ginger. Turn on machine and slowly pour the peanut oil and process to a puree. Transfer to a bowl and add the remaining ingredients. Stir together and marinate for 1 hour. Pass mixture through medium dye in the meat grinder. Transfer to an electric standing mixer and using the paddle, on slow speed, mix until emulsified.
Make the pot stickers. Separate the wonton wrappers and brush edges with egg wash. Place a generous spoonful of the filling and seal the edges, making small folds in the rounded side, starting from the center, and folding down to each end to create a half moon shape. Continue until you have used up the filling. Refrigerate until ready to cook.
Cook pot stickers in small batches in boiling, salted water. Drain. Heat a non-stick saute pan with peanut oil and sear until golden on the bottom. Remove and serve with dipping sauce.
Dipping Sauce:
1/2 cup rice wine vinegar
1 cup sesame oil
2 tablespoons minced scallions or green onions
Large pinch sugar
Combine all ingredients and whisk together. Serve as dipping sauce for pot stickers.
Yield: approximately 1 1/2 cups dipping sauce

Well, for non alcoholic drinks, a punch would be good: mix 1/2 gallon of orange sherbet with 1 2liter bottle of ginger ale in a large punch bowl, throw some slices of an orange in there for some creativity (pop the orange seeds out) - also the ginger ale punch is great with lime sherbet. Appetizers- This is an excellent dip- quick and easy- use 8oz cream cheese & 14oz jar Pace picante sauce ( i recommend mild) set out cream cheese at least 30 minutes to soften up, in large bowl, cut cream cheese block in half and pour entire jar of Pace over it, with a fork blend until smooth, you want the mix smooth for best results. Serve with Tortilla chips or Fritoe's. Little Smokie's in BBQ sauce-crockpot it! Happy Bday, Enjoy

A tray with varities. It has crackers, cheese, olives, pepperoni, rolled up turkey, chicken, ham and veggies. And have a dip in the middle of the tray.You can make one or you can get them at the Grocery Store. That will be a will nice appetizer. Happy Serving!

queen bee got it down PATTTTT. although a cheddar horseradish spread would compliment the spinach dip well. Add a little spice to the mix. Use bagel chips or just triskets to put it on. It can be found at Giant Eagle "Market District" or other places have it im sure. very good

that could have several answers. depends on what you are doing. it could be wings, nachos to quarted sandwiches or if a little fancy maybe tail on shrimp with sauce (shrimp rings) crackers with different little foods on them like crab meat or clams or veggie dip. also crackers with cheese balls & also rolled chicken tacos or beef rolled tacos with guacamole & other salsa's to me the key to good appetizers is finger foods that the person does not have to fix he or she can just grab & eat or dip & eat also chips & dips

I always liked the sausage balls and the veggie trays w/ dip. My very favorite, though, is the rotel dip. The best way is 1lb. Velveeta / 1 lb. ground beef / 1 small can of rotel. It is terrific.
