fresh tomatoes are washed, peeled, blanched and sent to the evaporator to remove the moisture. The moisture is removed to the correct amount and then is placed into a stainless steel kettle and mixed with all the flavored spiced that one uses for their particular sauce. Product is pumped to the canning line put in the canned and thermally cooked then cooled and packaged.
