I love to use a slow cooker to make a couple of different meals that are low-fat and taste great.

The first is veggie soup. I am not a vegetable person, but I use 1 packet of beef stew mix as the seasoning and it makes it easier for me to take. You probably need 4 cans of vegetables, whatever combo you like. Subsitute one can of veggies with a can of kidney beans if you like. Add a 12 oz can of tomato juice. Add 3 or 4 cloves of garlic, either crushed or whole and as much pepper as you like. If you want, you can add 1 lb of chicken. Chop it up into pieces an inch or so square. Add enough water to cover all ingredients, but not much more. Cook it in the slow cooker overnight until the chicken is tender enough to pull it apart with a fork.

The next is chicken tortilla soup. In slow cooker add 2 cans creamed soups, (I use cream of chicken, but you might like to make one can either cream of onion or cream of mushroom). Put 1 packet of taco seasoning. I like the hot, but it is up to you. Add 1 lb chicken raw & chopped into 1 inch squares. If you like add 1 can of kidney beans and/or corn. Add chicken broth until the ingredients are covered (or use water and throw in a bit of chicken boulion). Cook overnight until the chicken falls apart with a fork. Serve with a few tortilla strips on the top and maybe a sprinkle of low-fat cheese or sour cream.

i highly recommend recipe books by betty rhode, I think she has written 4 - so fat, low fat, no fat is the one I have its great! I lost 30 lbs the first time I followed it, course life happens and I gained it all back and then some but I am back on this now and love it!

Spinach, Tomato and Feta Omelet
POINTS: 4
INSTRUCTIONS

1 large egg(s)
3 large egg white(s)
1 cup spinach, choppped
1/2 tsp dried oregano
1/4 tsp table salt
1 sprays cooking spray
2 cup tomato(es), chopped
2 Tbsp feta cheese, crumbled
4 slice reduced-calorie wheat bread, toasted

Barbecue Chicken and Black Bean Pizza
POINTS: 9
INSTRUCTIONS

1/2 pound uncooked boneless, skinless chicken breast, cubed
1/2 cup barbecue sauce
16 oz pizza crust, pre-baked
1 1/2 cup shredded reduced-fat Mexican cheese
7 1/2 oz canned black beans, drained and rinsed (half a 15 oz can)
1 small onion(s), red, finely chopped
1 Tbsp cilantro, chopped



Place rack in center of oven. Preheat to 450ºF.


Spray a nonstick skillet and stir-fry chicken over medium-high heat, about 10 minutes. Transfer chicken to medium-size bowl and toss with half barbecue sauce.


Place pizza crust on a baking sheet. Sprinkle with 3/4 cup cheese. Arrange chicken and black beans over crust; sprinkle with onion and cilantro. Drizzle with remaining barbecue sauce; add remaining 3/4 cup cheese.


Bake 10 minutes or until cheese bubbles. Cut into 6 large slices and serve immediately.

To make a lowfat but yummy dip to go with veggies like carrot sticks, etc. - just take one carton of cottage cheese and add one package of Lipton Instant Onion Soup and pulverize it in the blender. Tastes great.

Sprouts and salads is the best low fat recipie. For taste you can sprinkle pinch of salt and fresh lemon juice.
But remember,you must exercise regularly to digest it; otherwise i will fail.
