Quick and easy dish of my own creation.
Saute boneless chicken breasts in a non-stick pan without any fat, til almost done. Remove from pan and hold warm on a plate in a 200 degree F oven.
Put about two cups apple juice for each four chicken breasts in the pan and bring to a fast boil, reducing the apple juice to a near syrup consistancy. Add a variety of sliced and chopped fruits of the season (i.e. apples, peaches, plums, pears, kiwi, mango, orange segments, bananas, etc) to the reduced apple juice.
Add about 1/8 teaspoon of dry mustard or 1/2 teaspoon of dijon or other prepared mustard. Also add a scant pinch each of thyme and rosemary.
Add the warmed chicken breasts back to the pan and coat them with the sauce and fruit and bring them back to serving temperature.
Serve with Basmati, Jasmine or wild rice or your choice of pasta and a green vegetable and a salad, and you are an instant gourmet chef!
Enjoy

Tropical Chicken
4 skinless, boneless chicken breasts
(8 ounce) can crushed pineapple with juice
3 tablespoons and 1/2 teaspoon white sugar
2-1/2 teaspoons lemon juice
1/2 teaspoon mustard powder
Preheat oven to 350 degrees
Combine the pineapple (with juice/ liquids), sugar, lemon juice and dry mustard in a small bowl. Mix all together. Place chicken breasts in a lightly greased 9x13 inch baking dish. Spread the pineapple mixture over the chicken. Bake in the preheated oven for 50 to 60 minutes.
(Recipe Variation: Before the chicken breasts, spread 4 to 6 cups of cooked rice in the baking dish. Place the chicken on top of the rice and bake all together with pineapple mixture)."

As the person above mentioned, curry is a great way of adding fruits, especially things like pineapple, mango, raisins, apple etc, just throw in a handful of whatever you fancy during cooking. Chicken is great with peaches, get your chicken portions nice and brown, then add them to a casserole dish, add some sliced up peaches (tinned in natural juice is good, NOT SYRUP) but leave out the juice. Add some lightly steamed broccoli, then pour over a cheese sauce. I know it sounds gross, but trust me. Bake in the oven til golden brown and bubbly, serve with salad. Speaking of salad, you can add any fruits you like to salad, apple is delicious. Moroccan foods lend themselves well to dried apricots, add some to a tagine, it tastes great!

If you like boiled cabbage, add a peeled and diced apple to the pot before cooking. It takes away the bitterness.
Pineapple on pizza is great!
Add fruit to green salad- mandarin oranges, dried cranberries, raisins.
Peach preserve or chutney is good with pork. Try fresh sliced peaches over pork roast.
