Huge choice but one thing I can help you with... RESOLUTION.
Resolution is dictated by the number of pixels composing the photos your daughter will take. The higher the no. of pixels, generally the better. So digital cameras on sale will state, for example, 2.0 Megapixels or 3.2 Megapixels or 4.0 Megapixels or 5 Megapixelsetc etc etc -- Unless you or your daughter intend to print very large copies of your photographs, there is absolutely no need to buy an expensive 5.0 MP or higher. I have been tempted to upgrade to 6 or 7 MP... but I have found that there isno need to. My 3.0 MP takes superb photographs. Advice again, buy a well known brand in 3.0 MP level. No need for higher. And... Happy Birthday to your daughter.

Fuji Finepix A500 or similar, available on the high street for around £65. But beware, with any camera you need a memory card – without one, you'll only be able to store around 5-10 photos approx. A memory card will add upwards of £20 to the bill.
