Hi,
I'm trying to come up with a cost of a cake I'm doing and I know the flour and sugar are 5lbs each, but I'm trying to figure out how many cups those equal and each place I look gives me two different equivalents. How much does one pound of flour or sugar equal in cups?

One website gave me: 1 lb equals 2 cups and then down below it said 1 lb of sifted bread flour equals 4 cups. So which is it? And does this go for the sugar as well? Please help!

1 LB sugar is 2 cups. Flour is about the same there is a difference between just measuring the flour and sifted flour. Sifted flour has been "fluffed up" If you are in doubt, measure 1 cup of flour and then weigh it on a set of kitchen scales.

Determine you cost by weight of ingredients ie: use 1 cup of sugar= 8 oz (1.99 for 5 lb sugar= 3 cents per oz cost of sugar is 24 cents)

It depends on the density of the product. To simplify it for you, 1 cup of cotton would weigh a lot lighter than 1 cup of rocks. So if you look at it the other way around, even though they are both in 1 cup measurements, they weigh different. They are two products of different density. The same applies to sugar and flour.

Therefore, I suggest, its best to weigh a cup of sugar, flour, etc., to see how many grams of weight each contain and break your cost down to the smallest denomination. Then as needed you could multiply that price by the quantity used to obtain the cost price.

1 pound all-purpose flour = 4 cups, sifted flour
1 pound cake/pastry flour = 4 1/2 cups, sifted flour

1 pound granulated sugar = 2 cups
1 pound confectioner's sugar = 3 1/2 cups, sifted
1 pound brown sugar = 2 1/4 cups, firmly packed
1 pound powdered sugar = 2 1/3 cups

The reason the sifted flour is a larger measure is because sifted flour is less dense and would take a larger measurement to weigh the same as unsifted flour which is very dense.

pounds are weight measurements and cups are quantity.
each will be different, flour-sugar-whatever,,,,b/c they don't weigh the same
