What are some signs or "tests" that I can look for that will show if my girlfriend really truly and honestly cares about me and loves me? Sometimes I don't believe that she does. I have a difficult time trusting people and believing in love.

Sounds like you are calling her a liar. You should trust more and not be so suspicious.
You will know by how she talks to you, treats you, and things she does for you, no matter how small it may seem. She will do things to please you.....
