I went to that racq web site but is there a way to make it not give a route that is on a high way as I would get pulled over by the cops for riding on the highway.

It's about a 200 Km trip you should get there comfortably in a day could take anywhere between 6 and 12 hours riding time (depending on your abilities).

When you get there just let it be known that you rode in from Brisbane. One of the local hippies is likely to give you a bed for the night

I would recommend using the Lions road (via Rathdowney) it is very hilly but far more scenic. (There is a good climb up to the border gate)

I'd like to come with you but I'm, on a short leash at the moment. (Expecting second child)

Here is a link to racq, if you hit the go beside "adv route then type in your address and Nimbin via Rathdowney it will give you the directions. Good luck

Sorry I've been a bit busy.
I may have been assuming a bit too much of you. When you say your not super fit. Does that mean that you regularly ride say 50-100 km rides? If not then maybe you shouldn't take this one on just yet. You do need to work up to this distance.

Otherwise
There is a bikeway beside the southeast freeway to avoid the motorway (see map 8) of this link for details. This will also help you get to Beaudesert Road but you will need to use the Highway from there (you are allowed)

You might want to check out Brisbane bicycle touring association
This is a great group you might want to join. They have many ride directions on this site
