I found one on allrecipes.com that was easy! Two layers of ice cream sandwiches, with fudge sauce and Cool whip.
I imagine you could add ingredients to it, to make it more special.
16 ice cream sandwiches
1 [16 ounce] container frozen non-dairy whipped topping
1 [12 ounce jar] chocolate fudge topping, room temperature
1 [1.5 ounce] bar chocolate candy, grated
Place 8 of the ice cream sandwiches side by side in a 9x13 inch baking dish. Spread evenly with half of the hot fudge topping, then half of the whipped topping. Repeat with the remaining sandwiches and toppings. sprinkle with grated chocolate bar. Cover and freeze for at least 1 hour before serving. Keep unused portion covered and frozen.
I tried this, using neopolitan sandwiches, and the addition of strawberry topping. My guests ate every bite of great big pieces, but said it was too rich. I thought it was great.
If I did it again, I would sprinkle some crushed oreos, instead of going strawberry, or even start with an oreo crust.
Also, Apricot Antartica :
1 package [12 ounces] vanilla vafers, crushed
1-1/3 cups slivered almonds, toasted
1/2 cup butter or marfarine, melted 1 tablespeen almond extract
6 cups vaniila ice cream, softened
1 jar[18 ounces] apricot preserves
In a bowl, combine the wafer crumbs, almonds, butter and extract. Pat a third of the crumbs into an ungreased 13x9 x2 inch pan. Freeze for 15 minutes. Carefully spread half of the ice cream over crust. Spoon half of the preserves over the ice cream. Sprinkle with half of the remaining crumb mixture. Freeze for 20-30 minutes. Repeat layers. Freeze. May be frozen for up to 2 months. Yield 16-20 servings.
I make this one all the time, to rave reviews, and people ask me to make it. I use 1 normal rectangular carton of ice cream, and 1/2 of another. Make this ahead of time, the extract seeps up throught the layers and makes it better. It is easy! Just pop the softened ice cream in the refrig while you wait for the layers in the freezer, it doesn't get too soft, that way.
This is really easy, or trust me, I would not be making it. I ain't the best cook, either, what I make is good, I just don't have a lot of knowledge.
Enjoy, the second recipe would impress an almond loving boyfriend a lot.

It's not exactly Ice-cream cake, but I use this recipe and it's always a delight. Guests have always asked my mom and me about it. It's superb, try it. And it's simple and easy.
You'll need:
Tea Biscuits [i.e. Nabisco social tea teabiscuits, or something of the like, should be rectangular or square and should be stiff].
Whip cream [Cool whip, real whip etc.]
Get yourself a rectangular dish [or a square, because it will make the layering easier]. Dip the biscuits in some cold milk, careful not to get them mushy. Layer the dish with the biscuits, then layer with whipped cream. Keep doing that until the dish is full. Refrigerate for about 1 hour, take out, garnish with chocolate syrup, sprinklies, chocolate flakes or whatever. And you're ready to go. Hope I helped :)

Schwarzwald Ice Cream Cake
NUT CAKE:
2 eggs
2 dl white sugar
100 g hazelnuts
1 teaspoon baking powder
FILLING:
1 liter vanilla ice cream
TOPPING:
2 dl whipping cream
100 g dark cooking chocolate
1 tablespoon cacao powder
If you are able to make the cake with nut cake mix, this cake is "a piece of cake".
