The best thing you can do is to encourage your customers to use more PVC and less copper. The biggest polluter in your toolbox is the solder, which is high in lead.

basically lots of small steps; the key is awareness, consider auditing each step of your working day - just pace yourself & don't try & fix it all at once, & remember to balance your cost competitivness with your unique environmental selling point. Initial costs can be high, but running cost will be lower, so agree a business plan with your bank manager. - and sell him some water saving devices at the same time :)
Avoid PVC, polyethelene is more environmentally friendly (but hard to get)
use copper guttering & downpipes into rainwater harvesting system.
Recycle any recoverd pipes. Reclaim any sinks & sanitary ware, rather than landfil.
Recomend water conservation products & lifestyles to your customers, easier if they have water meters.
Fit Solar water heating pannels and heat exchanges for hot water.
fit/sell aerating showerheads & pray taps etc
get carbon neutral office services like the Phone co-op and "clean" electric. low energy lights, Recycled paper...
Hemp overalls, hemp is a much better wareing & more comfortable & much more environmentally friendly than cotton.

I guess for a plumber it's hard because he mainly deals with water which is ok or the environment. So I guess try to use environment friendly chemicals to unclog drains and only if you need to use chemicals. Try to not wast material, and any material you can't use, recycle it. Try to fix leaks quickly so as not to waste water.

Besides using safe items to clean drains etc. try to save the trees that are or maybe are causing root damage.
WE NEED THOSE BROAD LEAF TREES! They not only give us oxygen, cooling, but clean the crap, we put into the air, out.
