Well, I can tell you that it doesn't fully digest in a dog's digestive tract. But, the proof is, that a dog fed with a corn based kibble will produce about twice as much poop! as the dog fed a meat based kibble with rice as the grain > http://www.thepetcenter.com/imtop/contrast.html.
Feeding even the more expensive corn based foods will cost you about 23% more per month, than feeding a meat based premium kibble.
Many dogs have corn allergies. It is the first suspect in poor skin conditions.> http://dogs.about.com/cs/dietandnutrition/qt/corn_free.htm
Dogs that are hyperactive will very often calm way down to a better learning condition, if corn is eliminated from the diet. Corn converts to sugars too quickly, and feeds hyperactivity, just as sugar does to children.

Because its very fattening and many dogs are alergic to it and it's harder to digest then rice or soy if a grain is wanted at all. There are plenty of fillers, inexpensive ingrediants, that have better nutricional value.-----"The top three ingredients in pet foods, particularly dry foods, are almost always some form of grain products. Pedigree Performance Food for Dogs lists Ground Corn, Chicken By-Product Meal, and Corn Gluten Meal as its top three ingredients. 9 Lives Crunchy Meals for cats lists Ground Yellow Corn, Corn Gluten Meal, and Poultry By-Product Meal as its first three ingredients. Since cats are true carnivores — they must eat meat to fulfill certain physiological needs — one may wonder why we are feeding a corn-based product to them. The answer is that corn is a much cheaper “energy source” than meat.
