Graham crackers used to be made out of graham flour, but most are not anymore. They are a sweet, course cracker (recipe to make homemade below). I've always used Hershey's chocolate for smores, but milk chocolate is the typical necessity. And melted marshmallows, best when it is outside over a campfire :)
Cracker, chocolate, marshmallow, cracker = smore!!!
Homemade cracker recipe:
INGREDIENTS:
1/2 cup all-purpose flour
1-1/4 cups whole-wheat flour
1/2 cup light rye flour (rye flour can be found in health food stores)
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/2 cup (1 stick) cold butter, cut into pea-size bits
2 Tablespoons honey
2 Tablespoon molasses
1/4 cup cold water
1 teaspoon vanilla extract
PREPARATION:
In a food processor or the bowl of an electric mixer, mix together the flours, sugar, baking powder, baking soda, salt, and cinnamon.
Add the cold butter and mix or process until the mixture resembles coarse meal. Add the honey, molasses, water, and vanilla. Mix until the dough comes together in a ball.
Between 2 sheets of waxed paper or plastic wrap, roll the dough 1/2-inch thick. Chill for 1 hour, until firm.
Set a rack in the middle of the oven and preheat to 350 degrees F. Lightly flour the dough and roll 1/8-inch thick. With a sharp knife or cookie cutter, cut into 2-inch squares. Arrange the crackers on nonstick or parchment-lined cookie sheets. With a fork, prick several holes in each cracker. Bake for 15 minutes, until lightly browned at the edges. Remove from the oven and let cool in the pan.
Yield: 48 crackers

Gram cracker is a sweet more like a vanilla wafer, but thin, the size of about 4 saltines. Popular chocolate is best like Hershey bar. Marsh mellows small or large. Here goes: Cracker-chocolate -marsh mellow then the microwave for about 30 seconds, watch Thur the window. Ta DA you have a smore. Good Luck. Oh put a paper towel under that in the micro.

You take 2 graham crackers, put a melted (soft) marshmallow and a piece of chocolate in between and eat! For the chocolate we usually use Hershey bars, or Dairy Milk bars - some sort of milk chocolate bar.
Graham crackers are similar in taste to Hovis biscuits - do you have those in Australia? It's like a wheatmeal biscuit that's a bit on the sweet side.

Maybe you can get the taste from this recipe, do you have Golden Grahams cereal or an equivalent?
You melt a half stick of butter with mini-marshmellows in the microwave, or using a double boiler.
Save a double handful of marshmellows before you do this.
When that is melted, stir in the cereal.
When it cools a bit, add the whole marshmellows in, they will stay together instead of melting.
Also add a bag of MILK chocolate chips...to the cooling mixture, so the chips don't melt.
Stir all this well, and spread evenly in a buttered cake pan.
It is delicious, very authentic flavor, except that burnt marshmellow taste...and no campfire needed.
I put a link up, if you don't know the cereal I am talking about, check here...I don't know if it will help, so I listed some alternatives or equivalents of the cereal.

Above is an Australian website, maybe you will find it!

All the other recipes you are getting, are accurate, but if you don't have graham crackers, you can try vanilla wafers or any sweet cookie. It won't be the same.
