Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.

When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.

Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.)

Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate. (Good Eats - "Steak your claim", but tested by me with excellent results)

I wish I did know how to do this. I have read a million recipes and tried a million different tricks, but every time I cook steak it always turns out as tough as shoe leather! I hope you learn the magic! For me, I guess I will always have to go to the steakhouse when the mood strikes for a nice slab o' cow.

1. Steak, if in a restaurant not roadside hawker. Without sauce as I like the taste as it is. Medium done. I don't like it too rare and bloodied. 2. Chicken chop 3. Lamb chop. Actually I like the taste of lamb, but I usually find it difficult to eat because of the bones. What looks like a huge plate ends up with very little meat!

Yes. Be nice to the cows. Before you slaughter them. Make sure it's mid-rare. Nothing ruins a steak like over cooking.

if we are talking of grilled steak, you just marinate it in beer

but filipino style (very easy), with sauce type

1. fry the beef slices until golden brown
2. add round slices of red onion
3. put enough soy sauce just to simer everything
4. turn of heat then put pure calamansi juice

all ratio depends on your preferences
