'I wish I were older .' is correct. This is the subjunctive mood in English - it is used for doubting, wishes, or statements contrary to fact. That 'wish' one fits here - you are not older - you just wish you were. Subjunctive yse is declining in english, but in places like this, it is still the only way to go.

They both work but I wish I were older sounds better.

I wish I were older....It's conditional..you wish you were but you are, in fact, not older.

They both are used by native speakers, but only ignorants think the second one is right. Use the first one.

In this case, "were" is correct.
