I also love the mango pitter, available at Bed, Bath & Beyond and Linens & Things. Once you've pitted the mango, score the mango as per Sugar Pie's instructions.

You cut each cheek off, that is each side of the mango, than cut the cheeks down by 3 and a across by 3 and push out by hold the sides. the left over can just be cut up into pieces with or with out the skin.

The easiest way to cut a mango is with a mango pitter. You can find them at Amazon.com, but there are other sites as well. I got mine at a store in Florida, but I haven't seen them in California yet.

A mango is flatter on 2 sides than it is wide. That is because the seed inside is fairly flat, but wide. So take you knife, lay it sorta sideways, andslice into the flesh, towards the bottom, going very near the seed. Repeat on the other side. Then slice off hte 2 pieces of flesh on the remaining narrow sides.
Holding one of the large pieces of flesh in yoru hand, gently score the flesh w/ your knife tip, not going thru the skin. Then flip the skin towards the inside. The cubes will stand up, and you can easily slice them off.
