KAREN'S SPINACH SALAD WITH GARLIC DRESSING
Serves 4

This is from my Kansas City friend Karen who says that, even though her husband Gary doesn’t eat spinach, she keeps this dressing in the fridge to serve on a variety of fruits.

Salad

1 pound fresh spinach
1 pint fresh strawberries
Chopped walnuts
Water chestnuts, optional
Onion, optional

Dressing

1⁄4 cup cider vinegar
1⁄2 cup sugar
1⁄4 teaspoon Worcestershire sauce
1⁄4 teaspoon paprika
1 tablespoon poppy seeds
2 tablespoons sesame seeds
1 to 3 cloves garlic, minced
1⁄2 cup olive oil

Clean and slice strawberries; wash spinach well and tear into bite-sized pieces. Arrange walnuts and sliced water chestnut or onion on spinach and strawberries.

Combine all dressing ingredients, except oil, in blender. (Dressing ingredients will emulsify best if mixed in a blender, but can also be shaken.) Slowly add oil.

Drizzle dressing over the salad and serve.

For a spinach salad, I'd go with a hot garlic bacon dressing.. for some reason, bacon and spinach just seem to compliment each other, and both go famously with garlic...

First, Mix together 2 tablespoons of water, 2 tablespoons of cider vinegar, 1/4 cup sugar, and a pinch of salt, until the sugar is fully dissolved. Then to the bacon!

Fry up about half a pound of bacon till nice and crispy. Pull the bacon out of the pan with a slotted spoon or some tongs, and put it on some paper towels to dry.

Toss several tablespoons of minced garlic into the hot bacon grease, varying the amount depending on how much you like garlic... Let it saute for a minute or two and get nice and carmelized. Take it off the heat and let it cool down a little bit, but still keep it warm.

Take about half of that vinegar/water/sugar mixture you made up before and add it to the garlic and bacon grease.. move it back to the heat and stir well, you want it to get nice and hot, but don't let it boil.

Toss the other half of that vinegar/water/sugar mix in with the spinach greens, and then pour the hot dressing over the greens and toss again. It creates a neat 2-layer effect.. almost like 2 dressings. Add a touch of salt and pepper to taste, and serve immediately. Most Tasty!
