cheese sauce for brocoli
2 tablespoons butter or margarine
2 tablespoons flour
2 cups half-and-half cream or 18% table cream
3 cups cubed Velveeta cheese (cubed about 1 inch)
1/4 teaspoon salt (or to taste)
black pepper (or to taste) (optional)
1 teaspoon sugar
paprika, for topping
Melt the butter in a small saucepan; remove from heat.
Blend in the flour until smooth using a wire whisk.
Return to heat; gradually whisk in the half and half cream; bring to a light boil, keep whisking until the mixture is smooth.
Add in the cubed Velveeta, and continue to mix with a spoon until cheese is melted.
Remove from heat.
Add in the sugar, salt and pepper; mix until combined.
Pour over the broccoli JUST prior to serving.
Sprinkle with paprika.
Note: this recipe may be cut in half if desired

This is a simple recipe, but uses ingredients you likely have in your fridge and produces great results.
6 oz. process American cheese, sliced
1/3 c. milk
1/4 tsp. onion salt
1 drop red pepper sauce (optional)
Heat remaining ingredients over medium heat, stirring frequently, until cheese is melted and mixture is smooth, 6 to 8 minutes. Pour cheese sauce over broccoli. Makes 4 servings.
For better results buy a higher end cheese (like a nice aged cheddar) and add a tablespoon of dry white wine before the cheese has melted completely. Most of the liquid will cook off but it adds a nice dimension to the flavor.

Sweat 100gr chopped onion with 150 gr butter, add flour with same quantity of butter add 250 ml cream or fresh milk. reduce heat and stir it until the milk turn slightly thick, add 200 gr frshly grated parmesan cheese, sprinkle with dried thyme if desired.

i cup of grated cheese
1 table spoon of corn flour
2 cups of milk
salt and pepper
1 table spoon of butter
in a saucpan melt butter add corn four mix well till it forms a ball
add milk bit by bit
then add salt and pepper
then cheese
and cook till it comes to the boil and goes thick!
