I know that 35% of the total content is Hemoglobin. Its also 95% of the dry content. But, if it is, whats the rest of the erythrocyte made from? Still leaves out 65%!! Mostly Water?

Its composition is water, hemoglobin & lipids, proteins & salts. The framework or stroma comprises almost 5 % of the wet weight the constituents being- lipids- lecithin, cephalin & cholesterol & insoluble proteins- albuminlike. Also elenin- a lipoprotein complex which contains the antigen has been isolated from the stroma.

35% is hemomatocrit- percentage of whole blood made of cells (primarily red cells)
Remaining 65% is serum - composed of the liquid portion of whole blood- It actually contians proteins wastes chemicals and all the other good stuff needed or occurring as a result of life in addition to water.
Hemoglobin is a measure of a protein in red cells (done most often by a color measuring method) at the current measurements it will probably be around 12 more or less
