Technically, olive oil is a type of cooking oil, but when people say cooking oil they generally mean vegetable oil, specifically. Vegetable oil is made from any number of different ingredients, such as canola, corn, soybean, etc.

Vegetable oil is much cheaper than olive oil; however, olive oil is much healthier. Olive oil also has a lower smoking point, which means it will begin to smoke and eventually catch fire at a lower temperature than vegetable oil. This is what people mean when they say it can 'burn'. Olive oil also has a very light olive flavor to it. This can be a good thing for a salad dressing, but not as much for a cake.

There are many grades of olive oil, from light to extra virgin. Extra virgin is darker, more expensive, healthier, and has more flavor (generally--the term is not legally regulated). Extra virgin is very green, while light or extra light is a pale yellow, similar to vegetable oil.

My oil selection usually consists of extra virgin olive oil, canola or corn oil (types of vegetable oil), peanut oil, and sesame oil.

Olive oil is where you extract or the first "pressing" of the olives for oil ,There's different grades of olive oil ; such as the first"pressing' is called extra virgin., cooking oil is usually made from corn oils; I would imagine olive oil is a little more expensive than cooking oil, I know olive oil is better for you if you're a diabetic like me it's monounsaturated oil, where as cooking oil is plant product.

Olive oil burns much more easily. However you can eat olive oil by sprinkling it on salads, dipping bread in it, etc. You could do this with other oils but it would not taste good.
