Would like to hear about recipes that are healthy and take less than 30 minutes to prepare. I do not want to buy Racheal Ray's book :)

this is my fav. you can eat it with rice, roti, bread, as a filling... for breakfast, lunch or dinner. it tastes really nice. i like how the taste of fried onions+tomates come together and gives that kick to the eggs. and the ingredients are well cooked mainly using water and not just the oil.

onions = fiber, tomatoes = vege, egg = protein, the spices = well i dont know, but i am sure they all something useful - chili powder helps to prevent cancer (y!news), water = do i have to say?:P

method:
heat 1 tbs oil

suate 2 large size onions (chopped)

when onions turn 'glassy' add 2 large sized tomatoes (chopped)

add 1/2 tumeric powder + salt for taste + 1.5 spoon chilli powder+1/4 spoon grounded cumin powder -- suate it for about 30mins

now add water untill all the ingredient are covered, bring to a boil on medium fire

now add 2 eggs inside, keep it in a medium for a whole minute.

switch off the fire. cover it. now let the egg cook slowly and completely in that steam coming out of it. -- the eggs taste aswesome that way:D

Use 1 cup of flour and season with 3 Tbsp of your favorite steak seasoning or Essence of Emeril.

Take chicken breasts and slice them so they're not too thick. Your goal is to get the breast to lay flat and cook evenly.

Soak the chicken in buttermilk for about 5 mins. Dip it in the flour, then back to the buttermilk and back to the flour again (which is what gives it a great crust).

Fry in a large skillet with 1/2 stick of butter and a large spoonful of Crisco. Sprinkle with a little garlic powder while the top side is still uncooked. Cook over medium heat about 5 mins, watching so it doesn't burn. Flip them over and cook the second side.

Deglaze the pan with your favorite white wine and stir in some sliced mushrooms and 2 Tbsp of the leftover flour from your batter. Stir til it starts to brown. Add 3/4 cup of milk or cream and a handful of fresh chopped parsley and a little fresh basil. Pour the sauce and mushrooms over the chicken. Serve it with your favorite pasta.

This is not gourmet food, but it works:

Boil 1-2 eggs and put them under running cold water. Boil some pasta (it takes 8-10 minutes usually). Put some frozen spinach in the boiling pasta water 2-3 minutes before the pasta is done.

Cut the eggs in small pieces and mix with the spinachpasta. Serve with carrots and ketchup.

anything that will fry up quick. you can make anything like a hamburger helper in a frying pan. breakfast rice conststs of white rice (cooked 20 min.) add sausage fried with soy sauce. scrambled eggs. green onions and pepper. soysauce over rice when mixed to taste.
enchilada-brown ground beef. make chili in it. add onions,torn up corn tortillas, chedder cheese on top till melted. garnish with lettuce and tomatoes.
whatever you like can just be added together in a pan. imagination is the key.
