A cherry picker usually referrs to a "mobile person(s) carrier" that raises them up into the trees where the "cherrys" (or apples oranges..etc) are.....

http://en.wikipedia.org/wiki/Cherry_picker

the hydraulics get you up there......

http://en.wikipedia.org/wiki/Hydraulic_machinery

"The popularity of hydraulic machinery is due to the very large amount of power that can be transferred through small tubes and flexible hoses, and the high power density and wide array of actuators that can make use of this power"

Ok now... here's a diagram of a hydralic pump motor similar to that what would drive the fluid to the pistons of the picker....

This next diagram shows how hydralic fluid from a motor like the one above moves a periscope of a submarine...not exactly the SAME piston as that of the picker but.....IT gives the idea....

Now for some of the more technical stuff...
the method is applied thru multiplication.....

see this ... http://en.wikipedia.org/wiki/Hydraulic_press

now if you are in need of the formulas of Hydralics actioning....

Slang term "Cherry Picker" refers to an hydraulic hoist.
