its a matter of preference since Organic milk is milk that is produced without the use of antibiotics, hormones or pesticides

Pasteurization kills the harmful bacteria found naturally in milk. The French scientist Louis Pasture found that by heating milk to a high enough temperature, it would destroy harmful organisms, like tuberculosis.

Any kind of milk can be Ultra Pasteurized. Actually Ultra does not mean more pasteurized than normal Pasteurization it actually is less pasteurized which keeps more of the natural flavor etc but still safe.
