I found this online. The photo looks a little too busy for an adult cake. But overall I think it really does the job nicely.
Step 1:
Lightly coat the entire cake with a thin layer of blue frosting. Swirl extra blue frosting on two thirds of the cake to create the ocean with waves and a curvy shoreline. Add whitecaps by squirting white frosting through a pastry bag.
Step 2:
To make the sandy beach, sprinkle graham cracker crumbs on the remaining third of the cake (the crumbs will stick to the thin layer of frosting). Next, let your kids help you turn the cake into a bustling beach. Arrange a circle of candy rocks around a candle bonfire.
Step 3:
Add Hawaiian dancers, a candy flower path, plastic palm trees, Fruit Stripe gum surfboards, plastic swimmers, LifeSavers tubes, sour tape beach blankets, and paper parasols. Don't forget to stock the ocean with edible and decorative sea creatures.
Here's the link to see the finished cake.

Get a pineapple ring to represent the hot sun...cut up some pineapple chunks and arrange it so it's the sun rays. Get some Hawaiian looking flowers(plastic if it's all you can find) and arrange it to your desire. Get an assortment of food coloring to add to the icing and draw an exploding volcano. Maybe draw a palm tree too and draw some water. If you want to use less icing, cut up an assortment of fruits to make the pictures. You can use cut up strawberries to represent the red lava exploding from the volcano. You can use cut up grapes for it's green color and arrange it so it is in the shape of a palm tree. Make an outline with green icing and fill it with the slices of grapes. If you want to go all out and you want the pineapple sun to have a smiley face you can use an apple slice or an orange slice for the smile(mandarins are delicious). Add some eyes with whatever cut up fruit that meets your fancy! The world is your oyster. Use whatever fruits you like the most and arrange them to the most creative extent possible.
