Porcupine meatball recipe with ground beef and rice.
INGREDIENTS:
1 egg
1 cup water
1 envelope onion soup mix
1 1/2 pounds ground beef
1/2 cup long-grain rice, uncooked
1 large can (15 ounces) tomato sauce
1 can (14.5 ounces) diced tomatoes with juice
1 1/2 cups water
1 teaspoon sugar
PREPARATION:
Beat egg lightly with water and 2 tablespoons of soup mix. Mix lightly with ground beef and 1/4 cup of the rice. Form into 12 balls; roll in remaining 1/4 cup uncooked rice, pressing rice into meatballs (rice makes meatballs look like porcupines). In a 3- to 4-quart saucepan or Dutch oven, combine tomato sauce, tomatoes with juice, water, sugar, and remaining soup mix. Heat to boiling; place porcupine meatballs in sauce. Cover and simmer, stirring frequently, for about 45 to 55 minutes. Rice should be tender and puffed out a bit from porcupine meatballs.
