The same chocolate you buy from a store, but you need to add olive oil to it (weird I know) but you do that as olive oil has no taste and allows the chocolate to be liquid enough to move around the fountain without setting. Im sure if you look this up on google it will agree as I read it in the manual for the fountain I brought for my ex once. It sounds weird but its true, normal chocolate, melted down and added to olive oil. Its good wirh strawberries and marshmallows :)

You can use any chocolate.
I've tried milk chocolate, organic chocolate, white chocolate and semi sweet chocolate. My favourite is semi sweet because all the other chocolates are way too sweet for the fruit. I think for a fondue fountain it's good to use chocolate in small pieces.

Ghirardelli chocolate chips might be better Hershey's had always had that waxy taste. A good way to get it melted and not over heated is to set a heating pad on med. or med high in a metal bowl then put a smaller metal bowl ontop of that with the choco chips.

Chips are the best and don't forget the oil.
We use an electric skillet at about 200 degrees. The temperature is very even and easy to control. You can use a smaller pan as well. A steel spatula works well in the skillet to keep it stirred.

It should say in the instruction packet. Some times the machine will only take certain kinds of chocolate. In the past, I've heard of mainly the bars, but every machine is different.
But flavor, any kind! Just pick your fave!

the best is bitter sweet chocolate coins. Melt over a double boiler, or in other words on a stainless steel bowl over boiling water.

Well, when I was watching take home chef, lol, he used dark chocolate mixed with cream lol. Specifically Im not sure as I wasnt paying too much attention to the recipe lol.
