1/2 cup skim milk or 1% low-fat milk
1 teaspoon vanilla extract
2 teaspoons maple syrup
2 tablespoons raisins
1/4 cup uncooked couscous
ground cinnamon
Heat milk, vanilla, maple syrup, and raisins in a saucepan over medium heat until hot and steamy. DO NOT BOIL!
Stir in couscous, cover, and remove from heat.
Let stand for 5 minutes.
Sprinkle with cinnamon and serve warm.
Fruit and Nut Couscous
4 tablespoons extra-virgin olive oil (divided)
1 small onion, finely chopped
1 clove garlic, crushed
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1 teaspoon freshly ground black pepper
1 teaspoon ground ginger
1/3 cup dried dates, chopped
1/2 cup dried apricots, finely chopped
1/2 cup chopped blanched almonds, toasted (see note)
2 cups boiling vegetable or chicken broth or stock
1 scant cup couscous, uncooked
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh cilantro
Salt and pepper
Seeds from half a pomegranate (optional garnish)
Lemon wedges (optional garnish)
Cilantro sprigs (optional garnish)
Heat 2 tablespoons oil in a saucepan and saute the onion, garlic and spices for 5 minutes. Stir in the dried fruits and almonds, and remove from the heat.
Meanwhile, place the couscous in a large bowl and pour the boiling broth or stock over the couscous, cover with a tea towel and steam for 8 to 10 minutes, until the grains are fluffed up and the liquid absorbed. Stir in the remaining 2 tablespoons oil, and the fruit and nut mixture into the couscous. Add the lemon juice and chopped cilantro, and season to taste with salt and pepper.
Serve couscous garnished with pomegranate seeds, lemon wedges and cilantro sprigs.
Note: To toast nuts, heat in a dry skillet over medium heat until they start to brown. Stir occasionally. Be careful not to scorch them.

i'm no longer a vegan ( I do devour restricted meat products) yet i will claim in case you devour beans and rice, it could be as filling and as satisfiying!!!!! There are days even as all i will favor to devour are black beans and rice....and how I cause them to will make absolutely everyone imagine two times about having meat (even my personal 11 year previous youthful ones!) Saute a million small eco-friendly pepper (seeded) and a million small onion (yellow or white) in an rather small volume of olive oil (more effective virgin or common olive oil). as quickly because it truly is "tender" , upload black beans (canned type or soaked black beans). upload a contact of garlic ( for your style), a small volume of salt, black pepper (to style), paprika (only a pinch), a short splash of purple wine vinegar, a bay leaf or 2 and a tablespoon (extra or a lot less on your style) or cumin. enable this simmer for roughly a million/2 an hour. Serve over rice (white or brown).....this is a meal in itself!!! SOOO tremendous and really soooo effortless! As I suggested in the previous, my youthful ones (that LOVE meat!) will devour this devoid of even taking into consideration getting any type of meat!!!! tremendous fiber in this, great flavors and it is going to fill you up!!!!
