Hmm....good question. I think having a thing means that you both are interested in each other and are still getting to know each other before actually building a solid relationship. Dating is when it's official that you both are boyfriend/girlfriend and its more serious. Hope that helped!

This is a great question, I actually had the same one. The two terms are actually the same thing. The difference is dating/thing and then a relationship. So it all depends on the level of commitment you both have for each. It is important that you discuss this with your partner of how committed you are for each other

Friends with benifits, meaning you're not exclusive.
Perhaps you could see it as a trial-relationship, or a sign that commitments isnt in the picture right now. So engjoy the fling , it'll develop if you both want it to.
