Whenever we have a party, all my friends beg me to bring my "Rotel from Hell" dip. In a crockpot, cube up 2 blocks of Velveeta mild mexican cheese. Over that, pour over 2 cans Rotel chilies & tomatos. Sometimes I even add a lb of browned sausage or hamburger. Melt over low, stirring once or twice til ready to serve. I always serve with tortilla chips & salsa, guacamole and sour cream on the side w/ black olives & japalenos.....Yummy!!

Guacamole dip is simple!

2 ripe avocados
1/4 red onion, cut into small dice
the juice of 2 limes
salt and pepper to taste

I found pita chips that go great with this dip and they are low fat. Garden of Eatin makes them. They are baked pita chips.

A tub of sour cream ans a poch of onion soup mix mix and let sit over night in frige cheep but good .

Easy. 1 pint sour cream, 1 pkg Hidden Valley Ranch mix, and one 10 oz. pkg of frozen spinach, squeezed dry. For an extra cruch, chop up a can of water chestnuts.

i just heat up some refried beans, lay them on a bottom of a pan, make some guacamole (just spoon out the avocado and put in a bowl, mash it up with a fork and add in some chopped tomatoes) lay the guacamole on top of the beans and top it all off with cheese. it's quick, easy, and good.
