Evolution is a genetic mutation that occurs over time. It has never been said that the original species goes away when one member of that species evolves. That is why the world is full of billions of species.
If, when the torch was passed to the next evolutionary creature, the previous creature died, there would be only a few living things on this planet.

We didn't evolve from dirt, we evolved from single-celled organisms. It's not like all single-celled organisms became humans, that's why we still get sick from them, and they are still present in dirt and other things.
