Margarine could change the texture slightly, but for the better in my opinion.
Do not use oil. It won't work. The butter/margarine gives the cookie a certain structure to begin with that puts spaces between the flour molecules....when the cookie bakes, the hard butter melts, and leaves little empty caves, which makes the cookie "cookielike".
Oh gosh...gotta go make some cookies now. I am hungry.

Margarine is fine, you can't use oil. There won't be much difference in taste or texture in this type of cookie. However, there is definitely a huge difference if you are making something like shortbread or pound cake.

I know that you can substitute "Apple Sauce" for oil
1- Always use real butter. If you thought that butter vs. margarine does not make a difference. Think again.

Butter is a flavor enhancer, yes substituting will change the flavor just like using white sugar instead of brown
